My apologies for being so busy with my shopping spree and hectic schedules. These winters wont let me to do anything, the day vanishes within few hours. By the way, winters are for, good food and cozy couchs.
The recipe which i am going to share today is very common street food for north indians, you can enjoy it guilt free because they are not oily as compared to other street foods.You can soothe your taste buds without any put on to your weight.



I still remember when we were kids and get a leave from school at afternoon we always look for Cholle Kulche. Cholle means white chickpeas and kulche is flat melt in mouth soft bready which goes very well with semi liquid boiled chickpeas, served with freshly chopped onions, tomatoes and tangy tamarind pulp. They are perfect alternative for any occassion, for any time. You can prepare them a day before and serve it when needed without any fuss. I used market bought kulchas but you can prepare them easily at home.


Ingredients:
  • 3 cup - Boiled White Chickpeas
  • 1/2 cup - Tamarind Pulp
  • 1/2 cup- Chopped onions
  • 1/2 cup - Chopped Tomatoes
  • 1/2 cup - Chopped Corriander
  • 1 tbsp - Choped Ginger
  • 1 tbsp - Chopped Green Chillies
  • 1 tsp - Red Chilli Powder
  • 1 tsp - Turmeric Powder
  • 1 tsp - Garam Masala
  • Salt as per taste


Method :
  • Take a pan add boiled chickpes with some water and let it boil for few minutes.
  • Add turmeric + chilly powder + tamarind pulp + garam masala + salt in it.
  • Let the spices boil with chickpeas and get infused properly with it.
  • Cook for few minutes and add freshly chopped onions + tomatoes + ginger + corriander while serving.
  • Your cholle is ready to be served with kulche.

Banana is a fruit which is generally in every house in every season because it is one of the favourite pick for our relatives while visiting , i dont know why people go for this option only. There are numerous fruits in market. Due to this most of kids have stopped liking it, atleast in my house, no one looks at them. Last week we had 2 dozens of banana occupying our dining table and staring at us, then i thought to utilize them before they go to dustbin.
Winters have come in full swing, a time when we get excuse to have 2-3 times to sip. An evening tea cant be sip alone, we accomodate either biscuits, namkeens or other savoury snack. A banana bread, mildly sweet and soft could be perfect for this time. Its healthy too because i added walnuts and raisins with whole wheat flour. Walnuts helps to lower cholestrol and raisins are rich in vitamin C.
While mashing bananas it was stinking a lot, so i used blender for no lumps. The recipe calls for all purpose flour but i used whole wheat to make it more healthy and nutricious.



Ingredients:
  • 1 cup - Whole Wheat Flour
  • 1/2 cup - Brown sugar
  • 3/4 cup - Bananas mashed (2 Whole Banana)
  • 1/4 cup - Milk
  • 2 tbsp - Yogurt
  • 4 tbsp - Oil
  • 1 tbsp - Vanilla essence
  • 1 tsp - Baking soda
  • 1/4 cup - Walnuts + Raisins (chopped)
  

Method:
  • Blend the bananas in a mixer with no lumps
  • Mix together banana puree + vanilla essence + yogurt + sugar + milk + oil
  • In another bowl take flour + baking soda + walnuts + raisins.
  • Fold dry mixture with wet ingredients properly.
  • Transfer the batter in a greased bowl and bake for 40-45 min at 180C
  • Enjoy them with evening tea or breakfast.

If you guys remember I tried making Dulche de leche at home with heavy heart, though it was for the first time only because the process is scary to make, but nothing happened like I had imagined. The outcome was sinful and worth waiting patiently. You can read full post Here.

The texture was creamy, rich, smooth and beautiful with golden brown color which just tasted heavenly with toasted bread, some drizzle over butterscotch ice cream, fresh fruits with whipped cream, licking, licking and licking. Now I need to try new fusions with it, once I tried making ice cream with it which was hit in one go. Read the post Here. I was so encouraged by its success that I decided to make Dulche de leche coffee. Both the fusions were quite opposite but still gave me chills with the final outcome.


I don't want to empower the taste of coffee over DDL, so I escaped coffee brew, just added few granules of coffee while melting DDL. It's just utterly delightful that you can't even begin to imagine the deliciousness, you simply must taste it to believe. Top it with sweet whipped cream and dollop of DDL, now it happens to be what you need to curl up on the couch after a busy day.


This sinful hot coffee blended with Dulche de leche gives you right balance of sweetness and caramel flavor, a generour pour turn your mug into something which tastes like it has ben made at some coffee house. One more reason o spoil yourself for this indulgence is, it can be made completely from homemade ingredients and as the eather has also started to artic, this will be perfect specially for afternoon when you want some shakiness to cheer your mood. It will not disappoint you with some blended ice for warmer days when your throat is starving for something cold. Its definitely worth a try, when you are looking for something easy and different.


Ingredients:
  • 2 cup - Milk
  • 1 tsp - Coffee
  • 2 tbsp - Dulche de leche
  • 2 tbsp - Whipped Cream

Method:
  • Take a saucepan and bring milk to boil.
  • When milk starts boiling, simmer the gas and add DDL+ Coffee in it. Let the flavours get mixed properly.
  • Pour in mug with whipped cream, dont skimp it and enjoy.

Winters has approached to India at some level. It’s not so good for us this time, usually we wait for chilly winds, hot soups, lots of green veggies, red cheeks, high boots. But this time we are worried to cope with it as we do have heaps of work to complete before our family function, which in January. This sudden change in weather will create problems for us as we are not expecting it very soon. But nevertheless before it comes in full swing we should not leave the chance to enjoy sweet and tangy flavors of summer fruits. I just hate removing red pearls from shell, they just splutter here and there with stains, thankfully I do have juicer which saves me from all this stuff. We just need to cut sphere fruits in two halves like semi circle then rest my juicer will handle to soothe my taste buds. Isn't it magical to get fresh juice within minutes of your choice . To add more sweetness and flavors to my glass I used pineapple to give nice aroma and color to my palette. Pinch of black pepper just let you flow in your dreams, a glass of freshness, windy weather, chit chat with your spouse, a perfect sipping evening




Ingredients:
  • 3 cup- Pomegranate
  • 2 cup- Pineapple (chopped)
  • ½ tsp – Black Pepper
  • ½ tsp – Lemon Juice
  • ½ tsp – Sugar
  • ½ cup- Water (if required)
  • 1 cup- Ice cubes



Method:
  • Take a juicer jar, add pomegranate + pineapple + pepper + ice cubes.
  • Check the taste and consistency of a juice, if required add water + sugar+ lime juice according to your taste.
  • To add more freshness to your eyes while sipping, you can make your own ice cubes with some pomegranate seeds and pineapple cubes. This will enhance the beauty of juice.

I hope you guys have blast on Diwali, we had so much fun enjoying each moment with my family.
Diwali a festival of Lights, Diyas, Candles, Rangolis, Dry fruits and so many sweets. It's a 5 day long festival started from Dhanteras, Chothi Diwali , Badi Diwali, Govardhan and Bhayadooj.
Every day has its own story associated with it, bringing love, happiness, wealth, prosperity and light into one's life. During Diwali festival, specially Hindu community lit their homes with candles, diyas which is said to be a pathway welcoming God into our homes.



 
Diwali was started when Lord Ram returned to his kingdom with his wife and brother after 14 years of exile.As the night was very dark, so people lit their homes with lamps to welcome his king. The lamps were significant of Good over Evil. Nowadays also people celebrate this day with great pomp and show, exchange gifts, prepares good food, burn crackers, decorate their houses with flowers and rangoli patterns, its like indian version of Christmas.




As it began to darken, prayers are observed along with fireworks. I usually stay away from crackers just admire them because I don't like wasting money but I love lighting phooljadi (sparkler) when it slowly emits colorful flames.




 

After prayers we used to lit each corner of our house followed with few ethnic pictures of family and sweets. Its more like a spiritual festival of connecting with your soul, eliminating darkness from your life and replacing with positive energy and brightness like the lamps that are lit for Diwali.

I know it's bit late to tell you about this special day of married ladies, but I cannot skip to share with you the perfect beautiful Indian attire of Aarushi. It was her 1st Karwachauth and the pictures will speak itself the strong bond of love between them. Now let me introduce to the highly enriched cultures and festivals of Indians
Karwa Chauth is one of the most popular festival specially for married women.It is celebrated in different ways depending on the region where a person lives. Though the festival is much popular in Northern and Western Indian states.It is the most important and difficult fast observed by married Hindu women. (Unmarried women, widows, and spinsters are barred from observing this fast.) Lord Shiva, Goddess Parvati and their son Kartikeya are worshiped on this day along with the 10 'karwas' (earthen pots) filled with sweets.
It is uncertain to determine how festivals have originated but yes there are some hypothetical stories behind this.It has been started from Military persons, as they usually stay away from home, also around the time of the festival, so women started to keep fast to pray for their safety.

There is another story about the origin of this festival. Earlier, girls were married at teenagers, it is very difficult to go and live with in-laws in very remote village.If she faces any problem with them, there would be no one with whom she can share her problem.Telephones,buses and trains were not heard of in those days.Once the girl left her parent's home for in-laws, she might not be back before long.


Thus the custom started that, at the time of marriage, she would be accompanied with another girl of her same age, treated as a god-sisters or god-friends.Their friendship was  sanctified through a small Hindu ceremony during the marriage and that girl was also married into the same village.They would treat each other like real sisters. During any issues in their married life, involving even with husband, they can discuss with each other and find a solution.Thus Karva Chauth started as a festival to celebrate this special bond of friendship between the brides and their god-friends .

This festival comes 9 days before Diwali. The term 'Chauth' means the 'fourth day' and 'Karwa' is an earthen pot with a spout - a symbol of peace and prosperity - that is necessary for the rituals. Hence the name 'Karwa Chauth



The notion of praying and fasting for the husband came much later,but husbands would always be associated with this festival, because the day of starting this friendship between two god-sisters was essentially the day of bride's marriage to him.

These were the stories associated with this fast but the important aspect of Karwa Chauth is that a dawn to dusk fast is undertaken by the ladies and they finally break the fast after seeing the moon.The fast is unique in itself because nowhere in this whole world does a wife go without food or water just to pray for the long-life and well-being of her husband. 

On this auspicious occasion, two most popular gifts that are certain to be gifted to the ladies who observes the fast are 'Sargi' and 'Baya'. Sargi is basically the gift of scrumptious meals, sweets and clothes presented to the woman on the occasion of the Karwa Chauth day which is to be consumed early in morning (which includes Vermicelli Pudding, Parathas, Mathris) on Karwa Chauth while Baya or Bayana  includes gifts for the mother-in-law, which is ideally a sari.


In principle, elderly woman in the house is supposed to narrate the story of Karwa Chauth before the fast is terminated.The women who observe this festival are called “Saubhagyavati” meaning “joyous and happy status of "wifehood.”For a newly wed couple, the festival is celebrated with immense pomp and enthusiasm.

Women dress up in special clothes during this festival. A pink or red sari with a gold woven pattern is worn by many women in the evening. New brides will wear their wedding costumes.All deck up in jewelry and wear 'mehndi' or henna patterns especially on the hands. Decorative 'bindis' on the forehead are a must for all women. Fasting women from all over the neighborhood gather in a group and narrate mythological stories.


But now a days this festival has  become a fashion symbol in modern era. Special eateries for the day of Karwa Chauth are prepared.Most restaurants have special menus.Different clubs organize many special events on this festival with various bumper tambola, stalls and even a dance competition. With so much feasting and fun added to it, fasting had never been so good before. 

All husbands reward their wives with a wonderful present for observing such a difficult fast for your well being, happiness and long life.One can choose from a variety of gifts that is a token of love that they both share. So, you should send her the most beautiful and precious gift on the occasion of Karwa Chauth.
The fast of Karwa Chauth truly sets the merry tone of the fun and frolic, festivity and feasting that come in good measure during Diwali — the biggest festival of the Hindus.
